Orange Drizzle Fairy Cakes*

Make a simple batch of fairy cakes using the all-in-one method with 8oz (225g). Add the rind of 3 clementines. Cook as usual. Once cooked, remove to a cooling rack. When cooled ice with icing made with the zest of clementines. Decorate with orange zest or delights. Simple. Use the normal wheat and dairy free ingredients to make these for your special guests!

Simple, quick, delicious, asian. What more could you ask for? I first made this when I was about 10 from a recipe book I received as a gift so I’m not joking when I say this is easy to make. Prepare in advance to allow for marination and the extra flavour!

Salmon with Pistachio Crust*

This crust is quick to make, gets smothered over the side of salmon and is baked like normal. A lovely addition to an everyday dinner. Takes it to a whole new level. Yum!

Blend 1/2 basil plant and 100g pistachio nuts in a food processor, add 4 oz pure butter. Season well. Using a palette knife smooth over the side of salmon (or cod works well) before cooking, uncovered, in an oven like normal.

Rack of Lamb with a herb crust*

Another easy-to-turn wheat and dairy free meal. Simple change the normal breadcrumbs to WDF breadcrumbs! Be careful not to overcook the lamb, better under-done than over 🙂 Another good idea for a dinner party.

INGREDIENTS

2 x Rack of lamb, french trimmed (all meat and fat trimmed off the bone)

2 oz breadcrumbs

2 oz parsely

4-5 walnuts, chopped finely

1 tbsp walnut oil (or something similar)

1 zest of lemon

salt and pepper

1 egg, beaten

METHOD

  1. Pre-heat the oven to 190C
  2. Chop all ingredients finely
  3. Combine all ingredients in a food processor or mix together well with a spoon
  4. Stand each rack on end in a deep roasting dish, entwine each bone with the opposite to ensure they stand up
  5. Brush with beaten egg
  6. Bind the breadcrumb, herb crust with the remaining egg
  7. Spread this over the racks evenly with a palatte knife
  8. Bake for 25 minutes for medium rare. Better less time than more!

  9. Slice in between the bones to serve

PREP: 15 minutes

COOK: 25 minutes

DIFFICULTY: easy

Lemon Tart*

The soft, sharp filling contrasts beautifully with the crisp, sweet pastry case. This is another tasty dish to take to a friends for dinner or cook for a dessert for those dairy free alternatives. The recipe is slightly unusual in that it uses a sweet shortcrust pastry so add 3oz caster sugar and 2 extra egg yolks to a normal WDF shortcrust pastry as made here. It may need some extra wheat-free flour to soak the additional liquid to get it to rolling consistency. Chilling in the fridge for 30 minutes before working with the pastry will help the process.

My mum and I made these for a New Years Eve dinner party. No-one guessed they were dairy free (and wheat free!!!!)… Chocolate! Absolutely delicious, could easily be a restaurant or shop dessert. Simple to make, needs a little time to set however.
